First, coat the eggplant with a light layer of oil, then grill it over a flame, making sure to get it on all sides. Depending on the size and type of eggplant, this process usually takes 10 to 12 minutes. To see if the eggplant is tender on the inside, prick it with a fork.
bake it and put it aside eggplant cool down. Meanwhile, finely chop onion and parsley. After the eggplants have cooled, remove the stems along with the skins and discard. Transfer the eggplant pulp to a bowl.
Add the salt, dahi, chopped onion and eggplant to the bowl and mash. Mix thoroughly and set aside. Heat a tablespoon of oil in a small saucepan over medium heat and add the mustard seeds.
